I have been lucky enough to find a tomato sauce (ketchup) made with stevia so it made this recipe super easy to make.

I smoked the beef ribs gently for around 6 hours, before brushing with a light dark bbq sauce glaze for another 30 minutes on the smoker. Since I was using chocolate, I chose cinnamon, cumin, and cilantro because it made me think of mole sauce.So far I’m quite partial to this chocolate bbq sauce that tickles the tongue with just a hint of spice. I picked up a couple of smallish but nicely fatty beef ribs from my local butcher, removed the membrane from the ribs, and applied a “Dalmation” dry rub of 50/50 coarse sea salt and coarse ground black pepper.

Cut four 30cm x 30cm squares of tin foil and arrange the strawberries, chocolate and marshmallows in the center of each square. I cut the rack down to individual ribs, and was seriously impressed with the beautiful smoke ring, and perfect burnished bark.Later he continued the business by himself as Hamlet, which he turned into a leading confectionery company. BBQ sauce may not be the first place you would think to find chocolate, but this one has a double whammy of both chocolate chips and cocoa powder.

There’s spice elements, in the form of chipotle and cayenne, and some smokiness (again from cayenne) and ancho chili powder. But one thing I do know is cooking to taste, and I put my tastebuds to work making an easy bbq sauce recipe. It seems like a strange thing to put chocolate in BBQ sauce, but the correct chocolate in the correct amount does something truly amazing. The most crazy one I’ve made was coffee flavored but this is definitely going to be next on the list…and going on some pulled pork soon! They say it's tasty, has a good consistency once melted, and comes in little bags so that you don't have to melt it all.
