In determining whether your baking chocolate is still edible or not, you need to remember that the best before date on the chocolate packaging is not the same as the expiration date: it is an estimate of when the chocolate will no longer have the same characteristics as after it was produced. To do so risks scorching — hence setups like a double boiler and water bath, meant to prevent heat from directly blasting your chocolate and burning it.Baker's 100% Cacao Unsweetened Chocolate Baking Bar is made from high-quality cocoa and has no added sugar. The Food and Drug Administration (FDA) requires both bittersweet and semi-sweet baking chocolate to contain at least 35% chocolate.
