It has an aromatic blend of herbs and spices which gently infuses the wines to create a unique bouquet and taste. The wine stays in these casks for 8 months, maturing and absorbing the flavour of the wood, before being transferred to smaller oak barrels which are taken outside and left for a year. Original Dry Vermouth Noilly Prat Original Dry Vermouth is a French fortified wine crafted using the finest white wines. The tasting experience begins with the nose – tones of cinnamon combine with balanced herbal, along with fresh green apple and floral notes. As for the taste itself, the finesse and delicacy of the white wines lead to a complex mouthfeel, with notes of elderflower and chamomile, dry fruits and citrus, along with a fine balance of spice and acidity.First created by Louis Noilly in 1813, Noilly Prat Dry is a classic French aperitif and a must for any enthusiast. The aromatic herbs and spices used in the creation of Noilly Prat Original Dry include Roman chamomile and gentian from France, nutmeg from Indonesia and bitter orange from Tunisia. To taste the dry white wine emerges, with a complex yet delicate bitter finish laced with a touch of spice. At its home in the South of France, a selection of fine white wines are aged outdoors in oak casks exposed to the Mediterranean sun, sea and wind for 12 months. Among them Chamomile, Coriander from Morocco, Bitter Oranges from Tunisia, Cardamom from India, or Elderflower.The Noilly Prat Vermouth is made thanks to a traditional craft, from the outdoor ageing process (only applies to Original Dry and Extra Dry) to the unique maceration process known as the dodinage (stirring by hand). In his BBC TV series French Odyssey, Rick Stein described Noilly Prat as a "true flavour from the Languedoc" and said, "I've done lots of experiments with white wines for fish sauces and I've come to the conclusion that Noilly Prat is the best. However, in 2009, the extra-dry Noilly recipe exported to the USA was replaced by the original dry formula used worldwide. In the oak casks, a process of maceration, supposedly unique to Noilly Prat, takes place over a period of three weeks.

Noilly Prat Original Dry Vermouth is best served chilled or with ice, and garnished with a twist of lemon peel. Noilly Prat vermouth is handcrafted in the Languedoc region of the south of France using only Blancs de Blancs wines made from the local Picoult and Clairette grapes. I don’t drink wine on an everyday basis, and so I tend not to have an open bottle hanging about that I can use in cooking. Fortified, mellowed and flavoured with herbs and spices, it doesn’t – unlike wine – need to be cooked out patiently to give a smooth, rich wineyness: the impact is near-instant. The aged wines are blended with sweet mistelle wine, along with a raspberry and lemon-infused distillate.
