Rosettes will work with a wide variety of frosting recipes, from simple American buttercream to silky Italian meringue. Even something like cream cheese frosting will work, provided it is not too soft. With this decorating technique, you want to use a frosting that is medium consistency–stiff enough to hold its shape once piped, but not so stiff that the edges are ragged and uneven. Drop flower tips looks like a star tip, but the grooves are slightly closed, making it easier to pipe a flower shape. These tips allow you to pipe a flower with just one squeeze, or you can make a swirled flower by simply twisting your wrist as you pipe.
For easy piping, don’t overfill your bag. It’s best to work with about ½ cup of icing at a time. Most Wilton decorating bags have a fill line for easy measuring.

These short and long prongs alternate with each other. First, put your Wilton #1M or Wilton #1B tip/nozzle into the pastry bag, fill it up with the frosting of your choice.
