About this deal

The “ Deluxe” kit features 5 standard type stones, but Lansky makes a number of other kits as well as sells individual stones for different needs – a leather stropping hone, diamond stones, curved stones for recurved blades, triangular stones for serrations, natural Arkansas stones, all in varying grits so you can tailor your setup to your needs and preferred technique. Construction Make sure that the rearward (angle adjusting) screw is resting in the small round indentation on the bottom half, otherwise the clamp will sit askew and your angles will be off. Once you have it tight, make sure that the blade doesn’t move in the clamp! Note: if you’re sharpening an exceptionally short blade, like the main blade on a Swiss Army knife, you should use the channel at the end of the clamp to go around the spine. This is to avoid the stone hitting the top of the clamp instead of the edge of the blade itself. You want to test for this when you’re setting any blade up in the clamp, to make sure the stone isn’t striking the clamp during any point in its travel. If it is, loosen the screw and slide the blade further out from the clamp and retry. The honing rod or leather strop realigns the microscopic burrs and ensures a smooth, fine edge on the blade. Before you begin sharpening your knives with the Lansky Knife Sharpener, gather all the necessary materials.

The Lansky Deluxe sharpening kit works fairly well as it comes, but there are a number of other things Lansky sells that will make things easier. First and foremost, if you don’t have a vise attached to a desk to anchor the clamp in, you’re really going to want to invest in the Super “C” Clamp. This will clamp to the edge of a desk – or a vertical surface – and has a moveable peg that you can set the angled clamp onto, fitting into a hole on the clamp in between the main screw and the thumb screw. When it’s time to switch sides, just lift the clamp off the peg, flip it over and place it the other way – simple! There are also two other mounts – a universal mount that can be permanently attached to a table, as well as a pedestal mount with a flat bottom.

Finding a good knife sharpener for serrated or semi-serrated blades can be a real headache. Thankfully Lansky hasn’t forgotten you, as both the Lansky Professional Sharpening System and the Lansky Universal Sharpening System include hones specifically developed to put the perfect edge on serrated blades. Angle - A commonly used angle for higher quality blades and provides an excellent edge for kitchen cutlery and slicing knives.The Lansky Knife Sharpener comes with guide rods that fit into holes on the knife clamp. Carefully insert these rods into the corresponding holes and make sure they are tightly secured. Next, pass the short upturned end of the rods through the vertical holes in the handles, so the end of it is facing up – away from the stone. With the thumb screw still loose, set the stone and rod down on a flat surface, and holding the handle flat, press down on the top of the rod until both it and the stone are flat on the surface of the table. Then tighten the thumb screw down as tight as you can (without using tools, to avoid stripping the insert.) This is so that you have a straight line between the rod and the stone. If you don’t, your actual angle will not be the same as the angle indicated on the clamp. The rough grit stone is used for initial sharpening, while the fine grit stone is used for refining the edge and achieving a super sharp finish. Step 5: Starting Sharpening with the Coarse Grit Stone If you have nothing better, this will just about get the job done, but this Lansky kit has long ago had it's day - There are far better options out there now, and for notably less money too. Once the knife clamp is ready, the only thing left is to attach a guide rod to your chosen hone. You should always start with a lower grit to remove burrs and other imperfections and to put a rough edge on your blade.Unless you’re completely rebuilding your edge you can start with a 120-grit or even a 280-grit hone. 2. Choose your angle

Thoroughly dry the stones and guide rods before storing them. A dry and clean environment prevents any corrosion or deterioration of the sharpening equipment. Step 9: Testing the Knife’s Sharpness The Lansky Universal Mount really saved our bacon here. It allows you to rest the sharpening system on a workbench or table and use your hands to provide stability rather than holding up the full weight of the system. Now, you need to hold the clamp. Lansky says to hold the bottom of the clamp in one hand, edge of the blade facing away from you, and hold the handle with your other hand. I have an adjustable vise at work which I find vastly preferable, I drop one side into the vise with the blade facing me and tighten it down. Now you’re ready to start. Use the same technique as before, starting from the knife’s base, and gently push the fine grit stone away from you along the blade’s edge. Step 7: Hone the Edge Just like before, place the sharpening stone on the knife’s edge, fitting the guide rods into the angle guide.The system itself is so intuitive and easy to use we barely needed instructions to get started. It was straightforward to attach our knife to the clamp, and once in place, we had no problem guiding the hone over our blade to find the proper angle.
